WHAT IS MAP?

Let's explain MAP, Modified Atmosphere Packaging, which is one of the most common methods used in food preservation. MAP, which is one of the physical preservation methods, is based on the principle of extending the shelf life significantly by creating a suitable atmosphere to prevent or restrict the microbial growth of foods.

The normal atmospheric environment consists of 21% oxygen, 78% nitrogen and less than 0.1% carbon dioxide. MAP refers to the change of the normal atmospheric environment in which the product subject to the packaging is in, by modifying it. This change includes increasing carbon dioxide and nitrogen levels as needed and decreasing the oxygen level.

The basic technical process applied in the modified atmosphere is to remove the air in the package and replace it with a modified gas mixture and to close the package with the help of an insulated film. Closing films can be produced with barriers according to the characteristics of the product and are adhered to the packaging with the help of heat using sealing machines. The bonding (sealing) process and the MAP technique take place simultaneously.

While MAP technology extends the shelf life of the products, it also plays an active role in preserving the natural quality and freshness of the products.
